Teriyaki Salmon Noodles

Teriyaki Salmon + Noodles

This is one of those meals that is so good it feels like a cheat meal. It’s fast so you can make it any night of the week but I love this for a Friday night homemade “takeout night”.

For the noodles, I love the Lotus Foods brand and but mine at Costco.

serves 4

INGREDIENTS

Salmon

  • 2 tbsp olive oil

  • 1 lb (12-16 oz) salmon skinless

  • ½ cup teriyaki sauce (Primal Kitchen or see below for homemade)

  • 1 tsp red pepper flakes

  • ½ tsp fresh or powdered ginger

  • ¼ tsp salt

  • ¼ tsp black pepper

  • 3 dry ramen noodles

  • ¼ cup onion, diced

  • 3 garlic cloves

  • Favorite veggie (I like roasted broccoli or bok choy)

Teriyaki Sauce

  • 1/3 cup coconut aminos or low-sodium gluten-free tamari

  • 2/3 cup water

  • 3 Tbsp raw organic honey

  • 1 Tbsp. rice vinegar

  • 1 tsp minced fresh ginger

  • 1 clove garlic

  • 1/4–1/2 tsp. black pepper

  • 1/4 tsp. sesame oil

  • 1 1/2 Tbsp arrowroot + 1 1/2 Tbsp. water (can sub cornstarch for arrowroot)

  • Optional: 1/2 tsp. sesame seeds

INSTRUCTIONS

  1. Whisk together all ingredients for the teriyaki sauce in a small bowl (including arrowroot/water slurry).

  2. Slice the salmon into 1 inch cubes, try to keep them equal sizes to ensure an even cook. Add cubed salmon and seasoning to a bowl, pour half of the teriyaki sauce over the salmon and mix well. Set it aside. 

  3. Chop onion, jalapeño and garlic cloves. Discard the jalapeño seeds to keep this mild in flavor.

  4. Start the water and cook the ramen noodles just to al dente.

  5. Pour half of the oil in a large sauté pan and heat on medium/high heat. Add in jalapenos, onions and garlic sauté for 3-4 minutes.

  6.  Add in the salmon cubes with teriyaki sauce. Cook for about 8-10 minutes, 4 minutes on each side for the salmon or until salmon is cooked to desired doneness. Once salmon is finished cooking, move to the side into a clean bowl. 

  7. Place sauté pan back onto the heat and add al dente ramen noodles. Pour the rest of the teriyaki sauce over the noodles and leave them alone without stirring for 60 seconds. Gently toss the noodles, add in the salmon and the veggies. Let it come to a simmer and remove from heat.

  8. Serve the teriyaki salmon ramen with veggies. Top with sriracha and sesame seeds if using. Enjoy!
