Salmon Three Ways

Blackened Salmon

Salmon is such a versatile and quick protein making it perfect for weeknights. Here are three easy ways to prepare your salmon.

BLACKENED SALMON

  • 1 pound wild caught salmon (2-3 pieces)

  • 1 teaspoon smoked paprika

  • 1/2 teaspoon dried oregano

  • 1/2 teaspoon kosher salt

  • 1/2 teaspoon freshly cracked black pepper

  • 1/2 teaspoon garlic powder

  • pinch crushed red pepper flakes

INSTRUCTIONS

  1. Pat the salmon dry with a towel. Stir together the paprika, oregano, salt, pepper, garlic powder and red pepper flakes. Sprinkle all over the salmon.

  2. Place the salmon on the grill. Close the lid and cook for 6 to 8 minutes, until it’s opaque and pink. Remove the salmon and let it sit for 5 minutes before eating.

  3. I love this served over a tangy slaw or on top of a salad

CHILI LIME SALMON

  • 4 wild caught salmon fillets

  • 1/2 cup freshly squeezed lime juice (or juice of 2 limes)

  • 1/4 cup fresh chopped parsley

  • 2 tablespoons olive oil

  • 2 tablespoons water

  • 1 tablespoon minced garlic (or 4 crushed garlic cloves)

  • 1 1/2 teaspoons red chilli flakes (adjust to your preference of spice)

  • 1 teaspoon ground Cumin

  • 1 1/2 teaspoons salt

  • 1 tablespoon honey

INSTRUCTIONS

  1. Preheat oven to grill/broil settings on high heat. Spray a baking sheet tray with cooking oil spray; set aside.

  2. Whisk lime juice, parsley, olive oil, water, garlic, chilli flakes, cumin, salt and parsley together to combine.

  3. Add the honey and whisk again until the honey runs smooth through the rest of the ingredients. Arrange the salmon fillets on the prepared baking tray; and pour over half of the marinade. Rotate the salmon to coat in the marinade.

  4. Bake until done, about 10-15 minutes (or at least 125 degrees).

  5. These are great for fajitas, fish tacos, or burrito bowls.

HONEY MUSTARD SALMON

  • 4 (5-6 ounce) salmon fillets

  • 2 tablespoons honey

  • 2 tablespoons grainy dijon mustard

  • 2 cloves garlic, chopped

  • 1 teaspoon chili powder

  • 1/2 teaspoon cayenne

  • 3 tablespoons salted butter (optional)

INSTRUCTIONS

  1. Preheat oven to 450° F.

  2. Whisk together the honey, mustard, garlic, chili powder, cayenne, and 2 tablespoons olive oil. Season with salt.

  3. Place the salmon on a plate and spoon the sauce evenly overtop.

  4. Add the butter to each filet. Bake for 10 minutes, or until the salmon reaches your desired doneness. During the last minute, switch the oven to broil and broil until lightly charred. Watch close.

  5. This is the perfect salmon for a salad or with some roasted veggies and/or potatoes.
