Egg Roll in a Bowl

This dish is always in the rotation - it’s fast, easy, and delicious. You can use any protein and veggies you have on hand. I always grab a bag of pre shredded coleslaw mix at the grocery store so I can whip this up in a jif.

serves 4

INGREDIENTS

  • 1 lb ground turkey

  • 1 bag shredded cabbage /coleslaw

  • 1 bag shredded carrots (optional if carrots in your coleslaw mix)

  • 1 medium yellow onion, diced

  • 1 tbsp coconut oil

  • 1 tbsp sesame oil

  • 2 tsp minced garlic

  • 1/3 cup coconut aminos

  • 2 eggs, beaten

  • green onions and sesame seeds for topping (optional)

  • 2 cups cooked brown rice

INSTRUCTIONS

  1. Heat the coconut oil on medium high heat, add the ground turkey and onions and cook until browned.

  2. Add the carrots & cabbage and sauté until soft.

  3. Mix together the coconut aminos, garlic and sesame oil and pour over the cabbage mixture. Cook until softened and incorporate.

  4. Turn the heat up to high and add the eggs.

    Scramble into the mixture and serve.

  5. Serve over cooked brown rice.
