One Pot Pasta

One Pot Pasta with Ground Turkey + Broccoli

The only way to make pasta on a weeknight! One pot and under 30 minutes with BOMB flavor! What isn’t to like? You can swap any short pasta and whatever veggies you like with this.

Makes 4 servings

INGREDIENTS

  • 1 lb. ground turkey, chicken, or beef

  • 1 medium onion, chopped

  • 3 cloves garlic, minced

  • 3/4 tsp. Italian seasoning

  • 2 cups broccoli florets

  • 2 cups sugar free marina sauce (we always use Rao’s marinara)

  • 1/4 tsp salt

  • 2 to 2.5 cups water

  • 3 cups uncooked pasta (we like Tinkyada brown rice rotini)

  • 1/4 c. Parmesan cheese (optional)

INSTRUCTIONS

  1. In a 6-qt. stockpot or large pan, heat oil over medium high heat

  2. Add the onions, garlic, Italian seasoning, and ground turkey until cooked through, about 6-8 minutes. If there is a lot of grease, drain it.

  3. Add broccoli, sauce, salt, and water and bring to a boil.

  4. Stir in the pasta and return to a boil.

  5. Reduce heat and simmer, covered, for about 6-8 minutes or until pasta is al dente. Stirring occasionally. This may take longer if using standard pasta (as opposed to brown rice/lentil/chickpea pasta)

  6. Sprinkle cheese if using and serve.
