Easiest Meatballs Ever
I winged this recipe the other night and they were a huge hit. I try to keep it simple when I know the girls will be eating them but you can certainly add more spices or variations if you like!
Makes about 24 meatballs
INGREDIENTS
1 lb. ground turkey or beef
1 egg, whisked
1/2 cup flour (I like chickpea flour) or breadcrumbs (we like ALEIA’S BEST gluten free)
1/2 cup grated parmesan cheese (or 1/4 nutritional yeast if DF)
1 tbsp. Italian seasoning
1 tsp garlic powder
1 tsp onion powder
INSTRUCTIONS
Preheat oven to 400 degrees and line a baking sheet with parchment paper.
Add the ground turkey and egg to a bowl and mix gently until combined.
Add the rest of the ingredients and combine, being careful not to over mix (overmixing will make them tough)
Using a medium cookie scoop, scoop the out into meatballs.
You can leave the meatballs as is for a more rustic look (pictured) or use your hands to form rounder circles.
Drizzle the meatballs with about 1-2 tbsp of avocado or olive oil and place in the oven.
Cook for 20 minutes. I recommend 10 minutes on the bottom rack, 10 minutes on the top to get a nice crispiness all around.
