Big Mac Tacos

Big Mac Tacos with Sweet Potato Fries

Ok…mic drop!!! I saw a Big Mac flatbread at a restaurant a few months back and immediately knew I need to make a version of it. So when I came across a Big Mac Taco recipe, I was sold. These will definitely be in the regular rotation. The sauce makes a lot so you can either cut it in half or freeze it for the next time you make them.

Makes 6-8 servings

INGREDIENTS

Big Mac Sauce

  • 1 cup avocado oil mayo (I like Primal Kitchen or Sir Kensington)

  • 1 TBSP pickle juice

  • 3 TBSP sugar free ketchup

  • 2 TBSP Dijon mustard

  • 1/2 tsp raw honey, agave, or coconut sugar (optional)

  • 1/2 TBSP white, rice, or apple cider vinegar

  • 1 tsp paprika

  • 1 tsp onion powder

  • 1 tsp garlic powder

  • 1/4 tsp pepper

The Rest

  • 6-8 Siete almond flour tortillas (or mini flour tortillas)

  • 1 pound organic ground beef (I used Wagyu from Costco)

  • salt, to taste

  • black pepper

  • 1 TBSP coconut or avocado oil (these are better for higher heat point but olive oil will work in a pinch)

  • 6-8 slices of cheese or shredded cheese

  • 1/2 onion minced

  • dill pickle chips

  • shredded iceberg lettuce

INSTRUCTIONS

  1. Heat your oil in a cast iron pan or griddle over medium heat (you’ll turn this up just before adding the tacos)

  2. Lay out your tortillas so you can assemble easily (you’ll thank me for this once your hands have beef on them).

  3. To each tortilla, add about 1/4 cup ground beef and flatten out to cover the surface of the tortilla as close to the edge as possible. If you have one, use a burger press to flatten. Season with salt and pepper.

  4. Turn the heat up to medium-high and add the taco, meat face down- as many to a pan as you can fit. Cook for 3-4 minutes until nice and crispy creating a crust.

  5. While the tacos cook, make the sauce by mixing all the ingredients together.

  6. Flip over, tortilla side down and lower the heat back to medium, and add the cheese.

  7. Let cook for another 2-3 minutes until the cheese is melted, the tortilla is crispy, and the meat is cooked through.

  8. Place on a plate or sheet-pan covered with paper towel…this will soak up any excess grease.

  9. Cook the remaining tacos.

  10. Assemble your tacos by adding the onion, lettuce, pickle, and sauce.

  11. Enjoy all the flavor and none of the guilt of the Golden Arches Big Mac!
