Sesame Chicken Cabbage Crunch Salad

There are a lot of ingredients in this salad so I recommend making the chicken marinade and salad dressing ahead of time. Also, you can get creative and leave out anything you don’t have on hand or sub what you do. It’s just a sald, can’t screw it up.

INGREDIENTS

SALAD

  • 6 cups cabbage mix (about 2 bags)

  • 1/2 cup diced green onion

  • 3/4 cup freshly diced cilantro

  • 1 cup shredded carrots (bagged or cut into matchsticks for excellent crunch!)

  • 1 red bell pepper, thinly julienned

  • 1 jalapeno, seeded and diced

    CHICKEN

  • 1 pound boneless skinless chicken breast

  • 1/4 cup coconut aminos or organic soy sauce

  • 2 cloves garlic, minced

  • 2 tablespoons brown sugar, coconut sugar, or agave

  • 1 tablespoon tahini

  • 1 tablespoon sesame oil (preferably toasted sesame oil)

  • 1 tablespoon rice vinegar

  • 1 tablespoon fresh grated ginger

  • 1 tablespoon sesame seeds

  • ½ teaspoon red pepper flakes

SESAME GINGER DRESSING

  • 2 tablespoons toasted sesame oil

  • 2 tablespoons olive oil

  • 2 tablespoons coconut aminos or organic soy sauce

  • 2-3 tablespoons rice vinegar

  • 1 ½ tablespoons pure maple syrup or agave

  • 2 cloves garlic, finely minced

  • 1 tablespoon freshly minced ginger

  • Optional if you want a creamy dressing: add 1 tablespoon tahini or cashew butter

INSTRUCTIONS

  • Cook the chicken: In a large bowl, whisk together the coconut aminos, garlic, sugar, tahini, sesame oil, rice vinegar, ginger, sesame seeds and red pepper flakes. Add chicken, then cover and place in the fridge for roughly 30 minutes or up to 24 hours. Then bake or grill your chicken however you like. Garnish with sliced green onion and additional sesame seeds.

  • While the chicken marinades, make the dressing: add all the ingredients to a mason jar and shake to mix. If you want a creamier dressing, add in a tablespoon of tahini or cashew butter.

  • Assemble the salad, top with chicken, drizzle with the dressing and top with your favorite toppings. I recommend sliced almonds, roasted cashews halves, sesame seeds, extra cilantro, extra green onion, and/or few jalapeno slices
