Honey Buffalo Chicken

Honey Buffalo Chicken

You can never go wrong with buffalo sauce and I love this spin with a little sweetness from raw organic honey. I like serving this over rice with some crisp and tangy slaw or broccoli as pictured.

serves 5-6

INGREDIENTS

  • 2 pounds chicken breasts or thighs, cut into cubes

  • 1 tablespoon smoked paprika

  • 1 teaspoon onion powder

  • 1 teaspoon garlic powder

  • kosher salt and black pepper

  • 1/4 cup arrowroot powder (or flour)

  • 4 tablespoons extra virgin olive oil

  • 1/2 cup hot sauce (I like Frank’s)

  • 6 tablespoons salted butter

  • 1-2 teaspoons seasoned salt

  • 1/2 teaspoon cayenne pepper

  • 1/4 cup raw organic honey

  • blue cheese or ranch dressing, for serving

  • sliced green onions, or serving

    Slaw

  • 1 bag coleslaw mix (or about 3 cups shredded cabbage)

  • 2 tsp Dijon mustard

  • 1 tbsp Honey

  • 1 tsp Kosher salt

  • 1 tsp Pepper, ground

  • 1/2 cup Apple cider vinegar

  • 2 tbsp Olive oil

INSTRUCTIONS

  1. Preheat the oven to 450° F. Line a baking sheet with parchment paper or rub with oil.

  2. On the sheet pan, toss together the chicken, paprika, onion powder, garlic powder, salt, and pepper. Add the flour and toss again. Add 2 tablespoons olive oil, tossing to coat.

  3. Bake for 10 minutes.

  4. Meanwhile, make the sauce. In a saucepan set over medium heat, melt together the hot sauce, butter, seasoned salt, and cayenne. Stir until melted and combined. Remove from the heat and mix in the honey.

  5. Remove the chicken and pour the buffalo sauce over the chicken, toss the chicken up in the sauce. Bake another 5 minutes, until the buffalo sauce is baked onto the chicken.

  6. While the chicken finishes and rests, make the slaw (you can also make this the night before or earlier in the day for extra flavor). Mix the dressing ingredients in a bowl and pour over the cole slaw mix. Toss to cover and set aside.

  7. Serve the chicken, slaw, and buffalo sauce with green onions over rice or quinoa and blue cheese or ranch dressing (if you’re DF, I like Primal Kitchen or make your own). I love this over rice, but it's also great with french fries too!
