California Cobb Salad with Creamy Herb Dressing
I saw this on Instagram and immediately made it that night. And now it is a summer staple and a huge hit with my clients. You can really use any ingredients you like but typically a cobb salad will include hard boiled egg, bacon and a hard cheese (optional) and the grilled chicken and avocado make it a “California Cobb.”
serves 4
INGREDIENTS
Salad:
4 cups greens of choice
2 pounds grilled chicken
4 hard boiled eggs, chopped
1 avocado, sliced or chopped
4-6 strips of cooked nitrate free bacon, chopped
1/2 cup cherry tomatoes, halved
1/2 cup bell peppers, chopped (optional)
1/4 cup red onion, sliced
1/4 cup feta (optional)
1 tablespoon sunflower seeds, pepitas, or seed/nut of choice
Creamy Herb Dressing:
1/2 cup plain unsweetened cashew yogurt (or Greek)
juice of 1 lemon
1/4 cup chopped herb(s) of choice such as parsley, cilantro and/or dill
1 garlic clove, minced
salt + pepper to taste
INSTRUCTIONS
Mix or blend the dressing ingredients until combined. If you prefer a creamier consistency, use a blender or food processor. Also, if using cashew yogurt and you like a thicker consistency, you can add a handful of cashews to thicken it up. Greek yogurt will be thicker.
Assemble your salad by layering each ingredient on top of the greens and drizzle with the dressing. You can also add a little fresh squeezed lemon juice.
